Cinnamon Pineapple Tropical Rum Cocktail

INGREDIENTS:

  • 2 oz Aged Rum (or Aged Agricole Rhum)
  • 1 oz Orange Juice
  • 1/2 oz Lime Juice
  • 3/4 oz Cinnamon Pineapple Syrup
  • 2-3 dashes of Chocolate Bitters (or aromatic bitters)

INSTRUCTIONS:
Combine all ingredients into a collins glass, and add crushed ice. Stir or swizzle to combine the ingredients, and top with more crushed ice. Garnish with a bouquet of mint, lime wheel and burnt cinnamon stick.

HOW TO MAKE CINNAMON PINEAPPLE  SYRUP
Combine 1 cup of pineapple juice, 3-4 broken up cinnamon sticks, and 1 cup of sugar into a medium saucepan and bring to a light simmer. Stir gently to dissolve the sugar. Once the sugar is dissolved, remove from the heat and allow the syrup to cool. Strain out the cinnamon sticks and store the syrup in a glass jar in the refrigerator for up to 2 weeks.
