Combine the mint leaves, syrup, and lime juice into a collins glass, and gently muddle the mint. Add in the Source One Vodka, and top with soda water. Add pebble ice to the cocktail and gently stir to combine the ingredients. Add more pebble ice, and garnish with a bouquet of mint.
HOW TO MAKE PASSIONFRUIT SYRUP
In a medium sauce pan combine 1 cup of water, 1 cup of sugar on low-medium heat (do not bring to a boil). Gently stir to dissolve the sugar, then remove from the heat. Cut 4-5 passionfruit in half, and scoop the pulp into the syrup and let it steep for a few hours. Strain the pulp out, and store the syrup in a glass jar in the refrigerator for up to 2 weeks.
