Sazerac cocktail with a lemon peel

Ingredients

2 oz Rye Whiskey (or Cognac)

.25 oz Simple Syrup

3 dashes of Peychaud’s Bitters

.5 oz Absinthe (to rinse the glass)

instructions

First, add the absinthe to a rocks glass and rinse it around the inside to coat the glass. Then, place the glass in the freezer to chill. Combine all ingredients into a mixing glass, add ice and stir to chill the cocktail. Remove the rocks glass from the freezer, and discard excess absinthe. Strain the drink into the chilled rocks glass. Squeeze the back of a lemon peel over the drink, twist, and place into the glass for garnish. Cheers!
